Cowhorn peppers are long, fairly thick-walled chili peppers that are shaped a bit like cow horns. They are very large peppers in general, growing up to ten inches long, though the pods are thin and curvy, very much like a large cayenne pepper. When ripe, they will turn a fire engine red. They are mild, with Scoville units of 5,000-8,000 with a very nice sweet flavor.
 
Definitely a sauce for people that do not like heat, this is the mildest sauce that we have made. My wife likes it for just that reason. She could taste the pepper, mango, and pineapple.
